• 1/2 cup (stick) butter
  • 1/4 teaspoon vanilla
  • 1 egg
  • 1 (8oz) package of cream cheese
  • 1 (18.25 oz) box Butter Recipe Yellow Cake Mix
  • Non-stick cooking spray
  • Powdered Sugar for dipping

Using a mixer (handheld or otherwise) combine butter, vanilla, egg and cream cheese until light and fluffy.  Mix in the dry cake mix (this is easier when done by hand).  Cover and chill for 30 minutes.

Preheat oven to 350 degrees.  Lightly coat a cookie sheet with cooking spray.  Drop dough by teaspoon-fuls in bowl of powdered sugar, roll into balls and place on cookie sheet.

Bake for 12 minutes or until golden brown.  Makes about 4 dozen

** as a side note, for all you chocolate lovers out there, you can substitute the Yellow cake mix for Butter Recipe Chocolate cake mix.
